If you don’t have sourdough then head to breadtopia.com and they have the below in the yeast version too! Here is the recipe: ➢ 380g bread flour ➢ 95g any whole wheat flour ➢ 345g water ( I used about 400g today) ➢ 100g starter though the recipe calls for 143g sourdough starter but that’s all I had (a lazy starter works too!) ➢ 15g honey ➢ 13g olive oil ➢ 10g salt ⏩Mix all ingredients in the bowl of a stand mixer for 2m at low speed and 8m at medium speed.⏩Transfer mixture in an oiled bowl and bench rest for 1 hr and then do 4 s&f every 30 min – make sure you oil your hands before doing them as this is a very wet/sticky/almost runny dough.⏩ I covered the bowl and put it in the fridge (I admit I forgot it there for 2 days) took it and let it rest for 30’.⏩Put parchment paper to carefully line a baking pan (13x9x2 inc) (sides too). Oil with about 2 tbsp of olive oil (sides too again).⏩Cover the pan with 2 clean plastic grocery bags & use binder clips to keep the bags from touching and sticking to the dough: Melissa’s words of wisdom which made my life easier!!⏩ let it sit on the bench for 2 hours or so before baking. Bubbly dough.⏩Drizzle (plenty) of olive oil on the top of the dough and do the five finger rhythm dimple! 🎼⏩Add anything you like on top (for me here it was red onions, oregano & rosemary – you can add cherry tomatoes, olives, peppers or anything really) and sprinkle with sea salt (coarse ).⏩Bake in preheated oven at 220 for 15 min, rotate pan and bake another 10-15. Υλικά
400 γρ. (2 & 1/3 φλιτζάνια περίπου) αλεύρι χωριάτικο
100 γρ. (περίπου ½ -¾ φλ.) σιμιγδάλι ή αλεύρι ολικής αλέσεως
375 γρ. νερό (1 & 1/3 φλ. περίπου)
1 φακελάκι μαγιά
1 κουταλιά μέλι
1 κουταλιά ελαιόλαδο
1 κουταλάκι αλάτι.
Πασπαλίζουμε με: Χοντρό αλάτι της θάλασσας, ελαιόλαδο, δεντρολίβανο (λασμαρί), κόκκινα κρεμμύδια κομμένα σε ροδέλες. Μπορεί να προσθέσουμε ντοματίνια ή ελιές ή φέτα ή αφαιρούμε ή ότι άλλο μας αρέσει.
